Easy Homemade Pesto
Pesto is a healthy and versatile sauce that packs a nutritional punch. Made from fresh basil, garlic, nuts, olive oil, it’s rich in healthy fats, antioxidants, and vitamins A and C. The healthy fats from olive oil and nuts support brain function and heart health, while the fresh herbs and garlic offer anti-inflammatory and immune-boosting properties. Add it to pasta, eggs, grilled veggies, or your favorite protein! Everyone needs a simple pesto recipe in their back pocket.
Pesto Ingredients (Makes about 1.5 cups):
1/3 cup walnuts
2 garlic cloves, roughly chopped
2 cups fresh basil leaves
1 cup fresh organic baby spinach
1/2 teaspoon sea salt
2/3 cup extra-virgin olive oil
1/4 cup nutritional yeast (DF) or parmesan cheese
Instructions:
In a food processor, pulse the walnuts and garlic until coarsely chopped. Add the basil and spinach, and pulse until a paste starts to form. Slowly pour in the olive oil and process or blend until the pesto is smooth. Add the nutritional yeast or parmesan cheese and pulse for 30 more seconds. Transfer pesto to a bowl until use.
