Coconut Cold Brew Popsicles
Makes about 4 6oz Popsicles
Ingredients:
1 can organic coconut cream
½ cup organic cold brew coffee
8 medjool dates, pitted and halved
1 teaspoon vanilla extract
½ teaspoon pink Himalayan salt
Equipment:
Popsicle molds
Popsicle sticks
Instructions:
In a small saucepan over medium heat, combine the coconut cream, dates, and vanilla extract. Stir occasionally, until you see some steam and the dates are tender. This should take about 5 minutes.
Remove from the heat and allow to cool for a few minutes.
Transfer to a high speed blender, then add the cold brew coffee and salt. Blend until combined and smooth.
Carefully pour into popsicle molds (we used these molds) and freeze for 50-60 minutes before inserting popsicle sticks. Continue to freeze them until firm.
When ready to eat, take them out of the freezer. If the molds are resistant to loosening, gently run under warm water until they easily release. Enjoy!
