Afternoon Pick-Me-Up Energy Balls
No-bake, nourishing snack that tastes like dessert and also helps maintain your energy between meals!
Ingredients:
½ cup cashew butter
¼ cup raw honey
1 teaspoon pure vanilla extract
¼ cup flaxseed meal (ground flaxseed)
½ cup gluten-free rolled oats
1 tablespoon unsweetened shredded coconut
1 tablespoon cacao nibs
Instructions:
In the bowl of a food processor, add the cashew butter, honey, vanilla, flax meal, and oats and pulse until well combined. Next, add in the cacao nibs and coconut and pulse a few more times until they’re mixed in.
Using your hands or a spoon, scoop the dough and roll into 10 balls. Place in an airtight container and place in the fridge for at least 1 hour before enjoying.
These will keep in the fridge for 1 week or in the freezer for 1-2 months.
