Summer Soba Noodles

Bring on the soba noodles this summer! They are light, yet filling, and packed with nutrients.

We are putting a colorful spin on the traditional soba noodle salad by adding some beautiful summer produce! The more colors on your plate, the more nourishment you’re giving your body, after all.

Soba noodles are traditionally 100% buckwheat flour, which is a naturally gluten-free, grain-like seed that’s a great source of fiber and packed full of antioxidants. Sometimes, it can be hard to find pure buckwheat soba noodles (and they can be on the pricier side), so we love using a hybrid noodle (linked below) made of buckwheat flour and brown rice flour. 

This makes a perfect side dish along with your protein of choice. We recommend seafood with this, like grilled shrimp or baked salmon. 

Tossed in a flavorful and naturally creamy sauce, this side dish is a winner, winner for your summer dinner!

Summer Soba Noodles
Serves 3-4

Ingredients:

  • 2 tablespoons tahini

  • 2 tablespoons coconut aminos (or Tamari)

  • 1 tablespoon rice vinegar

  • 1 inch ginger, peeled and grated

  • 1 garlic clove, grated

  • 1 package Buckwheat & Brown Soba Rice Noodles

  • 1 tablespoon coconut oil

  • 1 cup Sugar snap peas

  • 1 head Bok Choy, chopped

  • 1 orange bell pepper, thinly sliced

  • 1 summer squash (like yellow squash), chopped

  • Sea salt, to taste

Instructions:

Make the sauce. Combine the tahini, coconut aminos, rice vinegar, ginger and garlic in a small bowl and whisk until combined. If it’s too thick, add a little bit of water at a time until desired consistency.

Next, boil some water and add the noodles. Cook according to the instructions on the package but make sure to taste test the noodles for doneness! Once cooked, drain and rinse with cold water. Set aside.

In a large skillet, heat the coconut oil. Once hot, add your sugar snap peas, bok choy, bell pepper, and summer squash. Season with a big pinch of salt. Sauté until all veggies are softened, 7-10 minutes. Remove from heat.

In a large bowl, combine the noodles and veggies, then toss with the sauce. Serve warm or chill in the fridge if you prefer! Serve alongside your favorite protein.
