GF Hasselback Apples with Vanilla Cinnamon Butter
Our fall-winter favorite sweet tooth fix!
Have you ever had hasselback potatoes? If not, they’re delicious. This Swedish style of preparing is thinly slicing the potato, without cutting through it. This allows the glaze on top to really get them crispy on top and super tender and flavorful on the inside. What else would be delicious with technique? Apples! Apples are another MVP of Fall time. They’re filled with vitamins and fiber, and when they’re baked into or as a dessert, they are super decadent. This dessert would be a great healthy swap for apple pie or crisp, and it totally satisfies that craving! Make sure you’re using butter that’s grass-fed. Grass-fed butter is much higher in Omega-3 fatty acids and Vitamin K. Using natural sweeteners, like maple syrup and coconut sugar makes this easier on the blood sugar.
GF Hasselback Apples with Vanilla Cinnamon Butter : Serves 4
Ingredients:
• 2 large organic apples (I used pink lady), peeled, cored, and halved (vertically) 3 tablespoons • grass-fed butter or ghee, melted and divided
• 1 tablespoon pure maple syrup
• 1 teaspoon pure vanilla extract
• 2 tablespoons coconut sugar
• 1.5 teaspoon cinnamon, divided
• 1⁄4 teaspoon nutmeg
• 1⁄4 teaspoon pink Himalayan sea salt
• 1 tablespoon almond flour
• 1 tablespoon hemp hearts
• 4 tablespoons gluten-free rolled oats
Instructions:
Heat oven to 400 degrees F. Prepare your dish. Grease a ceramic or glass baking dish with some butter. To prepare the apples, cut each apple in half, all the way through the stem. Using a spoon (or grapefruit spoon), scoop out the core and seeds. Lay the apple cut-side down and very carefully slice parallel (about a quarter of an inch apart), but make sure to not slice through the apple. Stop just before you get to the bottom.
Next, make your butter mixture. Take 1 tablespoon of your melted butter and stir in your maple syrup, vanilla, and 1⁄2 teaspoon of cinnamon.
Brush the apples with the butter mixture, making sure you get in the cracks of your slices. Bake the apples for about 20 minutes, covered.
While the apples are baking, make your delicious topping. Combine the oats, coconut sugar, remaining butter, remaining cinnamon, nutmeg, pink salt, almond flour, and hemp hearts.
When the 20 minutes are up, take the apples out of the oven and top with the crumble mixture. Bake, uncovered, for about 15 minutes, until the topping becomes golden brown. Remove from the oven, top with whipped cream or your fave ice cream, and enjoy!!
